So I tweaked my previous recipe for coconut bread and made a delicious coconut quinoa loaf.
1 tsp vanilla extract
3 tbs honey
1 cup coconut flour
1 cup quinoa flour
3 tsp bicarb soda
3 tbs coconut oil
1 cup coconut milk
1 cup water
1. Pre-heat oven to 160°C.
2. Mix ingredients with a fork.
3. Bake in loaf tin lined with baking paper for 45 mins, or until toothpick comes out clean.
4. Add lots of (real) butter and stuff your face, I mean, enjoy with a delicate sensibility.

PRO 65 g
So while it’s not strictly paleo (honey is a grey area) or LCHF (most of the carbs are from the coconut and quinoa flours), it is strictly delicious! 🙂
